Veggie Crackers


Blend the following in Vita-mix until smooth.
Put the red bell pepper in Vita-mix first to blend easier.

1 large red bell peppers
4 med. carrots
4 cloves garlic

Add the following and blend again:

3 C. cashews
1 3/4 C water (approx.)

Pour into a bowl. Add the following and stir:

3/4 to 1 C flaxseed meal
4 teas. salt

Spread fairly thin on a dehydrater tray lined with teflex. Dehydrate for 12 to 24 hours on 105.
Remove from teflex sheets as soon as dry enough (about 8 hours) so they will dry faster.


Note: If desired you can start the dehydrater a little higher as the evaporation will keep the food temperature lower than the air. After an hour turn it down.

You want to keep the dough as dry as possible while still being able to blend and spread. Too much moisture will take too long to dry and that may create issues with freshness.
