Gary's MasalaBlend the following in a Vita-Mix or blender* until smooth:
1" Ginger, fresh or frozen Makes a flavorful carrot salad by blending 1/4 cup with two finely grated carrots. I like to grate about 2/3 of the carrots and chop the other 1/3 into small chunks, then mix all three (masala, shredded carrots and chopped carrots) together. Also great as a dip for celery. Makes approximately four 1/4 C servings. *Note: If using a regular blender, you may need to add water in order to blend. "Gary's Masala" is an intentional play on words. One of the most common spices used in Indian food is "Garam Masala", which literally means "hot mixture". There are many different kinds of masalas. Garam masala is a blend of up to 12 spices, which may include black pepper, cinnamon, cloves, cumin cardamom, dried chilies, fennel, mace, nutmeg, and other spices. I began this sauce by looking over three recipes for garam masala, and picking out the spices I like. Then I simplified, varied the amounts and ingredients, and came up with a tasty dip that is addictive to me.
I've found myself eating huge amounts of celery when I dip it in Gary's Masala. I hope you enjoy it as much as I have. Happy dipping!
