Barbara's Favorite Romaine SaladWash lettuce leaves, cut along the rib line, then thinly slice it the other way (1/4" to 1/2" wide strips).1 head Romaine lettuce Add remaining ingredients to Romaine lettuce in a large salad bowl. 2 to 3 carrots, finely grated (organic carrots taste sweeter) 1 C. thinly sliced red cabbage 1 red bell pepper, diced 1 C. thinly sliced sweet onion (or other mild onions*) 1 cucumber, thinly sliced 1 C. garbanzos or black beans, precooked OR 1/2 C. walnuts, slivered almonds, or sunflower seeds, raw any other veggies you happen to have (tomatoes, avocado, etc.) Optional: alfalfa sprouts            spinach Toss salad and serve with your favorite salad dressing. Or use the Desperate Dressing below. *Green onions also taste great, but white onions add a nicer color contrast. Desperate DressingWhen desperate, in a hurry and you don't have time to make a dressing, here's a quick fix for a flavorful salad:Sprinkle the following on your salad, toss a little and eat!   flax oil   salt   onion powder |
